Lunch: Eggplant and blue cheese spread with flat bread
My last batch of frozen double chocolate coffee daim cookies has finished unfortunately. I am sad but this is not the end of the world, just the end of my frozen stock of dough. These have become one of my favourite cookies. Coffee and chocolate together in one cookie with hints of toffee is extremely addictive. I will for sure be making these again, perhaps quite soon. Maybe not after I finish writing this post though it is very tempting.
Eggplant and blue cheese was an experiment and it turned out to be a great combination. I got inspiration from the Arabic dish called baba ghanoush. Baba ghanoush is generally made with onions, tomatoes and other vegetables.

Its fun to read what other people eat. Grub Street presents what Chef Marco Canora ate during a week. Great reading, and its always interesting to know what a chef eats. Surrounded by food all the time, food and drinks merchandisers regularly visiting, getting invited to eating and drinking events, having to taste food and desserts before it goes to the customers... it’s a tough job but someone has to do it! Working and owning a restaurant has its perks and I guess shortcomings as well.

I have never heard of eggplant with blue cheese before but I am very intrigued by the combination. Blue cheese is great with almost anything! I am also a great fan of the photography on Almost Bourdain.
