Pork curry and rice |
Today's Food Diary
Breakfast: missed
Lunch: Pork curry with rice
Dinner: Bulgur, chickpea, pickled carrot and cornichon salad
Today was a leftover day. Pork curry and sticky apricot and coconut cake were from yesterday, both delicious but best not consumed on a daily basis. And I did exactly the opposite, eating it for two days in a row. The leftovers have finished, thankfully. However I ate in moderation.
The dinner salad was made simply by combining all ingredients, adding chilli flakes and paprika and dressing with apple cider vinegar and olive oil. I also tried small portions with peanuts and raisins. The peanuts did not do much, they added crunch but no flavor. However the raisins were a great addition. There is some leftover for tomorrow. Such foods can be consumed on a daily basis without guilt!

Tastes of Home has an interesting recipe for crispy chicken seaweed patties, a significantly upgraded version of McDonalds chicken nuggets. Seaweed is incorporated into the minced chicken before forming the patties or nuggets. This sounds delicious and is more nutritious. Seaweed is very healthy, I used to eat it often but I have been forgetting to buy these recently.
That chocolate cake looks absolutely amazing!

ReplyDeleteWell you couldn't let those leftovers go to waste, now could you! I say a little indulgence every once in a while isn't such a bad thing!
ReplyDeleteOh you had me at crispy chicken!
ReplyDeleteyummychunklet: it does, absolutely. Probably more amazing to eat it!
ReplyDeleteMarina: thank you, you are most welcome to replicate, thought it will be a day late:)
Joanne: no I couldn't let it go to waste, I had to do what I had to do:)
Maris: I haven't eaten crispy chicken for a very long time, I satisfy my urges by reading about it.
