Chickpea bulgur, wheat berries and smoothie

Chickpea, spinach and bulgur
Today's Food Diary
Breakfast: Rolled oats with raising, toasted coconut, sunflower seeds and linseeds
Lunch: Chickpeas, spinach and bulgur
Dinner: Kyrgyz Chicken Plov (leftover from yesterday)
Baking/sweets: oat sweets with chocolate etc

The chickpea meal was cooked in tomato paste and garlic, flavoured with apple cider vinegar and a good dash of chili flakes. It tasted much better than it looked. We eat with our eyes first, but sometimes it is better to eat without our eyes first! This meal may have done well in one of those concept restaurants where you eat in total darkness. I suppose I shouldn't be so critical, it probably doesn't look so bad.

Pings has a quick and nutritious smoothie recipe but with an interesting twist. The smoothie is made with muesli, yogurt, milk, banana and honey. The muesli is blitzed along with the rest of the ingredients. I suppose minced muesli would add more body to the smoothie and minced dried fruits would add excellent flavor.

  1. What a healthy meal plan, I would love to follow this.

  2. Definitely trying your chickpea recipe but will substitute the chili flakes with chili powder. Thanks for sharing the recipe!

  3. Really liking the chickpeas bulgar - I would not have to close my eyes to eat this dish.

  4. I tried chickpeas and tomatoes before they dont look good as well but they taste great. For me I dont care about how the food look as long as it taste good then thats my kind of dish!
