Pajeon, cotton cheesecake and greek yogurt cake

Today's Food Diary
Breakfast: Polenta porridge with banana, toasted coconut, flax seeds and sunflower seeds
Dinner:  Baked pajeon/pa jun with carrot and onion (Korean pancake)
Baking/sweets: Various polenta cookie dough combinations

Spaghetti with eggplant bacon blue cheese sauce – you probably think I am strange and weird. I perhaps cannot disagree with you. Looking at the photo and the flavor combination – you probably think it tastes so revolting that even a starving pig will refuse to eat it!

I have made this dish before but without bacon. Bacon and blue cheese have strong flavours but it works together well. And it is quite easy to prepare, it requires minimal knowledge of rocket science, and basic culinary skills. If you overcook eggplant it is not a bad thing, as long as you don’t burn it. The harder part is getting the pasta right. You can get the recipe here.

I used the cheese, bacon and cream with restraint since I did not want to clog my artery!

CaffeIna has posted a recipe for Greek yogurt cake. What intrigues me is the simplicity. Here is the list of ingredients: 500 g plain Greek yogurt, 130 g sugar, 50 g flour and 4 egg whites. That’s all there is to it. Whisk the egg whites to stiff consistency, add the rest of the ingredients and bake at 360 degrees for about an hour.

The recipe uses just 4-ingredients. It’s a modified pudding version. I wish I had yogurt in my refrigerator right now.

Simple recipes that produce delicious outcome is always nice. I just posted a recipe for easy polenta chocolate cookie.  The cookie uses more ingredients but is just as easy and quicker.
