Chickpea, spinach and bulgur |
Breakfast: Rolled oats with raising, toasted coconut, sunflower seeds and linseeds
Lunch: Chickpeas, spinach and bulgur
Baking/sweets: oat sweets with chocolate etc
The chickpea meal was cooked in tomato paste and garlic, flavoured with apple cider vinegar and a good dash of chili flakes. It tasted much better than it looked. We eat with our eyes first, but sometimes it is better to eat without our eyes first! This meal may have done well in one of those concept restaurants where you eat in total darkness. I suppose I shouldn't be so critical, it probably doesn't look so bad.

Pings has a quick and nutritious smoothie recipe but with an interesting twist. The smoothie is made with muesli, yogurt, milk, banana and honey. The muesli is blitzed along with the rest of the ingredients. I suppose minced muesli would add more body to the smoothie and minced dried fruits would add excellent flavor.
What a healthy meal plan, I would love to follow this.
