Suovas with Mushroom Sauce |
Suovas is the Sami word for "smoked". And Sami’s are people who live in the Artic region, in northern Norway, Sweden, Finland and Russia.
Souvas also refers to salted smoked reindeer meat. It is one of the most
delicious meats I have eaten. The flavor is intense, gamey and smoky. Reindeer
meat is quite lean but extremely tender when thinly sliced and cooked quickly. The

Demand for egg yolk-free omelettes, sandwiches
and shakes has resulted in a shortage of egg-whites in the US. To me this
sounds strange since the egg york is tasty and healthy.
According to the US food price information
service Urner Barry, the cost of liquid egg whites increased by 80% in the 12
months to December 2013. As a result egg whites are now significantly more
expensive than the yolks.
I was even surprised to read that McDonald's has
products that only use egg whites, such as Scrambled Egg Whites and Egg White
Delight McMuffin. These products are supposedly healthy because they only use
egg whites. But it also contains liquid margarine. And the Egg White Delight
McMuffin contains processed cheddar cheese. To me it seems strange to remove remove
egg yolk but use liquid margarine and processed cheese. The American
consumer thinks otherwise.
So you are back to Sweden I guess ;-) Anything smoked is delicious so I'm sure this reindeer dish is fantastic too.
ReplyDeleteI still remember how shocked (and disgusted) I was to learn white only omelettes were served in the US... What is the point? A tofu omelette would be so much more delicious if the person doesn't want to eat yolk (but it's been such a long time eggs are no longer "vile", at least in Europe...). And you are right about the taste: I would be very happy to order a yolk-only omelette :-)
