Beetroot risotto, peanut butter jelly and flan

Beetroot and sausage risotto

Today's Food Diary
Breakfast: Scrambled eggs on sourdough toast
Lunch: Beetroot and sausage risotto
Dinner: Baked spinach savouries/salty spinach cookies, carrot soup, bean soup
Baking/sweets: Salty spinach cookies

I was a little unsure about the marriage between beetroot and sausage, it worked. The sausage was lightly smoked with a mild flavour which did not conflict with the sweetness from beetroot, just like a marriage between an accommodating husband with mild personality and a sweet wife! Or vice versa. The risotto also had caramelized onions for extra flavour and sweetness. Thankfully this sweet neighbour did not cause any complications in the marriage between beetroot and sausage.

They look really delicious, and will sound even more delicious once you find out what it is – peanut butter and jelly bars.

Rosa has the recipe for a delicious sounding tea-caramel flan. I have not seen many blog postings on flans recently. A flan, also known as crème caramel or custard, uses egg as the thickening agent. It is like an egg tart, with the crust replaced with caramel, and turned upside down. Flavouring with tea sounds like a nice touch.
