Sourdough, cheesecake and bacon marinade

Breakfast: Sultanas
Lunch: Roasted root vegetables with pickled herring and beetroot salad in mustard dressing
Dinner: Sourdough wholemeal bread with pickled herring and beetroot salad
Baking/sweets: Sourdough wholemeal bread, shortbread and polenta cookie (experiment)

I rarely eat meat in the evenings, and definitely not large amounts like last night. While the meal was definitely pleasant and I was not force fed, I felt like prolonging the 'breakfast' with a simple and light breakfast. Perhaps there is no logic in what I did, I am not a doctor or nutritionalist, but it made me feel good, mentally at least anyway!

The sourdough bread I made today turned out quite fluffy. I let the starter work overnight and then the dough had a few hours of rising time. In the process the dough developed a relatively strong alcohol aroma which unfortunately evaporated during baking otherwise sourdough bread would have made me happier!

A Hamburger Today has a post on bacon marinated burger. Is it possible to marinate meat with bacon? I turned to trusted wikipedia for advise and discovered that marination “is the process of soaking foods in a seasoned, often acidic, liquid before cooking”... The liquid in question, the 'marinade', must be either acidic with ingredients such as vinegar, lemon juice, or wine or enzymatic (emphasis added).

It seems that is not possible to marinate meat in bacon since bacon is not liquid and even if liquefied it will not be acidic or enzymatic. The restaurant serving the burger ‘marinates’ the meat with bacon overnight and then minces it the next day. It seems the intention is to infuse the meat but mincing the meat with bacon will thoroughly infuse the burger patty anyway. Technicalities aside the burger received fairly reasonable reviews and the meat patty was well flavoured with bacon, perhaps too well flavored.

  2. I think there is definitely some sense to the idea that if you eat something heavy for one meal, you lighten up for the next. And that sourdough sounds delicious!
