Eggplant blackbean stew, Picasso and lemon poppy seed cookies

Eggplant and blackbean stew with rice
Today's Food Diary
Breakfast: Rolled oats with sultanas, toasted coconut and linseeds
Lunch: Spicy Eggplant and blackbean stew with rice
Dinner: Fusilli with egg and onion

The eggplant and blackbean stew was excellent. It may look a bit boring in the photo but it was definitely packed with flavour, had a good kick from the chilli and quite nutritious.

I didn’t want to eat much sugar today so I baked just half a cupcake using frozen dough which has been sitting in my freezer for a while. I wonder if we eat less sugar now we can eat more later! I guess not, if only it worked this way.

Hot Polka Dot concocted an interesting cookie - lemon poppy seed cookie. It is a first for me seeing poppy seeds being used in cookies, and combined with lemon. Poppy seeds would add crunch and interesting flavour. I am quite curious about this cookie.
