Herring risotto, bread pudding, eat figs and live longer

Herring risotto with pickled beets
Today's Food Diary
Breakfast: Sourdough polenta bread with jam
Lunch: Herring risotto with pickled beets
Dinner: Spaghetti with cauliflower in tomato sauce
Baking/sweets: Various polenta cookie dough combinations

The herring risotto was tasty and nutritious, though not as creamy as it should have been. The pickled beets worked well with herring. Herring has a stronger flavor so beetroot complemented it rather than act as a bully! I love beetroot salad with herring, the risotto had a similar but milder flavor combination.

Want to live longer – eat figs. Figs are loaded with potassium. According to real age, a recent study of people over age 55 who had a potassium-rich diet had a lower risk of dying over the next 5 years.

Potassium regulates your blood pressure and can reduce risk of stroke and heart disease. However consuming too much potassium can be toxic, it can reduce life expectancy instead of increasing it even more. When it comes to potassium and  other nutrients, more is not necessarily merrier. 

There are so many studies concluding that eating certain foods increases life expectancy. The advice needs to be taken with a pinch of salt. In any case it is always good to know that figs are rich in potassium and potassium regulates blood pressure. There are other sources of potassium but figs are tasty.
