Double coconut oil shortbread cookie and pickled garlic


Double coconut oil shortbread cookie

May sound a bit confusing but I called it double coconut because these cookies contain coconut oil and desiccated coconut.  So almost 'double' the amount of coconut flavour. The recipe is available here.

On to another issue, some idiot was copying my recipes and photos and posting on his (yes a guy) facebook page without my permission. And a kind blogger brought this to my attention. I wrote to the idiot and asked him to remove the photos and text within a day otherwise I will report to facebook. No action was taken so I reported to facebook, and they removed the photos and text within a day. Pretty good result. That idiot copied quite a few photos and recipes. While I should feel good that my recipes and photos are good enough to be copied, it still didn’t make me happy. But very impressed with facebook’s speedy action.

A finding from Washington State University shows that garlic is 100 times more effective than two popular antibiotics at fighting disease causing bacteria commonly responsible for foodborne illness. Garlic increases the overall antioxidant levels of the body.

  1. I'm so sorry to hear about the photos theft, but I'm also glad facbook reacted well to your email. Such things happen all the time from what I see but of course it's not a consolation.
    Your cookies look excellent! I have never used coconut oil, but it's sold here even in basic supermarkets, so I should experiment soon. I wonder if it adds an additional coconut taste/aroma or is it neutral?
    Have they mentioned vampires in the article about garlic? It's a good remedy against them too. ;-)

  2. Coconut oil does add good aroma/flavour, esp good quality coconut oil. If you smell 'raw' oil you will know what I mean. Very strong pleasant aroma.
    No, they didn't mention vampires. I don't want to disappoint you but I think vampires don't exist. However father Christmas is real:) And if you put your tooth under your pillow a fairy does replace it wit money.
