Coconut polenta cookies and kookoo sabzi

Rice, blackbeans and mushroom stew

Today's Food Diary
Breakfast: Muesli
Lunch: Rice, blackbeans and mushroom stew
Dinner: Spinach and egg omelette with pita bread, french fries, roasted chickpeas
Baking/sweets: Coconut and polenta cookies

The coconut and polenta cookies was an experiment and it turned out pretty good. I need to refine the recipe further before posting it. Coconut and polenta is a good combination and both are fantastic additions to cookies.

When you hear kookoo sabzi what comes to your mind? Kookoo sabzi is a Persian savoury pie made with lots of herbs, barberries and eggs. Herbs are the main ingredient and not a garnish. It would like an intensely flavourful and nutritious dish. There are so many interesting cuisines all around the world that we seldom hear about.
