The Humble Potato and Pumpkin Cheesecake

Breakfast: Sourdough toast
Dinner: Sautéed mushroom and onions with polenta flatbread

I made the Herring Beetroot Potato Salad with Caviar two days ago. It tasted even better after the two day rest in the refrigerator. The onion flavour mellowed down even further and for some strange reason the herring flavour deepened and became more noticeable, in a very good way. 


One of today's eating highlights was a cold meatball, yes one cold lonely meatball. I really enjoy going to the supermarket, looking at new arrivals, looking for bargains and sampling. And on offer today was cold meatballs. Meatballs always taste good, even when cold. But it tasted even better today, I was hungry and it was cold and dark outside. I never expected a meatball to lift my spirits so much.

The humble potato gets both good and bad reviews. Today’s article is on a positive note with a potato earning a title of cheapest, most-nutritious vegetable. Not only is it easily accessible, white potatoes has one of the best nutritional values in the produce department, providing significantly better nutritional value per dollar than most other raw vegetables. 

One medium-size (5.3 ounce) skin-on potato contains just 110 calories per serving, boasts more potassium (620g) than a banana, provides almost half the daily value of vitamin C (45 percent), and contains no fat, sodium or cholesterol.

Now for the bad news. The article did not mention anywhere that fries are good, it only talked about baked, boiled and roasted potatoes.

    potato skins also have iron !!! great for vegetarians... though I prefer heme iron - it is still a decent source of nonheme.

  9. I am so happy your salad also got better after two days (I wonder what happens after three days; I never got this far with my salad...).
    I have recently seen very expensive deep friers where apparently excellent chips can be made with just a tablespoon oil! I am waiting for the prices to lower and then put it on my wish list!

    Sissi: I wonder too, maybe next time I will test to see how it tastes after 3 days, I will try at least! I’ve heard about those fryers. I think it takes 30 minutes to make potato chips. Regular deep frying does not soak up a lot of oil anyway.

  13. I love potatoes so it was actually nice that there are more good things said about them. =) Yeah french fries... the food makes us happy even though it's not all "healthy". Moderation would be the key? It's hard to stop eating though. =P

  14. I do that often too. The other week I had a couple of mini chicken Kievs with garlic butter inside. The one was so good, I went for another one! That's not inappropriate, is it?

  15. hahahahaha yes, french fries are not our friend. veggies soak in more oil than other types of food! hahaha. :) i love potatoes, just wish i didn't eat so much of it in one sitting :)
